OBS stopping recording forever and other related issues

So my OBS has an issue for over a really long time already, its been about 1 year and a half ever since I've started using OBS for recordings. Where the stopping recording would take forever, previously it was only sometimes or maybe a once in a while thing but recently after tweaking some settings, it happens all the time. I literally can not record a single clip without it being stuck on stopping recording forever. The force stop doesnt work, changing back to my previous settings for OBS doesnt work either and these previous settings have worked completely fine before. As an attempt to try to fix this I updated my OBS as well as studio drivers for NVIDIA and also changed back to Game ready drivers to no avail.

On top of that I've read and heard from many videos that MKV is recommended since it can still be used in a case where I need to abruptly close OBS or if OBS is closed without the recording stopping properly. Although it just doesnt show in location its assigned to, its not a location problem because 1 second or tiny tiny test clips I've recorded go straight to the same place.

Normally I've also heard that the Stopping recording issue is due to a really low end setup but my set up isnt exactly very low end I'd reckon, also I've been able to record before back then really long videos and clips ofcourse with some stutters here and there but still been able to record really well. My FPS obs is recording at is at 120FPS because thats kind of necessary for the types of videos im making, 60FPS seems a little jarring for fast paced videos and 90FPS doesnt exactly make much of a difference from 120FPS in terms of looks as well as performance throughout my testing.

At this point I've tried everything, going back to my old VBR settings which worked last time but now doesnt, I've recently switched to CQP which was recommended by most which doesnt give off much of a difference. I'm quite stuck here, any help would be appreciated since slogging about everyday tweaking and testing to no avail is pretty tiring </3

My specs shouldnt be too low end since games like MGSV, Elden Ring, Battlefield 1, Apex, Warzone, Doom eternal etc. could be run with almost the highest on graphics settings with no lag or stutters at all completely smoothly.

Also encoder overloads happen almost everytime which is pretty much a guaranteed in my case which sucks it would also be great to get some tips on that, since idk its a pretty common issue yet I havent been able to find a solid fix for it except for some occasions where it just "doesnt happen".

My specs are:
1660 SUPER GPU
AMD Ryzen 5 3600
16GBS of ram
B550 motherboard

Ahhhh thanks man, I'll give it a try after work today and update ya on how it goes.
