Question / Help OBS showing game fine but stream is severely cut off

Hello. I've been streaming fine for a while now, but today something went wrong. My OBS is fit to screen, canvas 3440x1440 and rescaled on the Video settings page to 1280x720. It doesn't matter if I rescale on Video or Output, or even both, same thing happens.

However the attached screenshot below shows what's happening. Left is stream right is OBS.

OBS sends w/e is in the preview window.
Also, downscaling from 3440x1440 to 1280x720 seems a bit weird, they are not the same aspect ratio.

Might be a little slow here...but I'm not sure I follow. How would I fix this in the preview area?
