Question / Help OBS Recording Quality Issue

Whenever I record, OBS starts off at 720-180p recording quality, but later on-when I'm actually playing the game- its absolute CRAP quality- e.x.-http://www.youtube.com/watch?v=35NfvVl5oGM If you skip to about 1 minute in, the quality is absolutely HORRIBLE

Any input, guys?
