When I try to record my game (F1 2019) the game runs very smoothly but the video recorded with OBS is not.
I have a GTX 1060, a i5-8300h 4GHz cpu and 16 GB of ram.

I was having this exact issue for a long time. The solution is to go into the OBS Studio settings, and change the CPU priority from "Normal" to either "Above Normal" or "High." This should fix your issue, but if it does not reinstall the software.

From OBS 24.0.3, they implemented a feature to reduce lag in OBS Studio when your FPS fluctuates in game. This is only accessible inside of administrator, so just try running OBS Studio as administrator and try again.

Your specs should not be the source of the problem, since I have an RX 560 and still it doesn't fluctuate.

Try turning that off. NVENC is generally free in terms of GPU resources except for two recent feature additions: lookahead and psycho visual tuning.

You should also be using the main or high profiles and not baseline.

If you're not doing multitrack audio, you might do a test with simple output mode and indistinguishable quality, large file size settings to see how that performs.

OBS (as every encoding stage that uses nvidia encoders) uses the encoder part of the gpu, not the render cores used by the gameplay.
While the game doesn't use the encoders, there is no concurrent use of gpu ressources that much.
As Narcogen already said there are now two features recently added to the nvidia workflow that breach this rule. Lookahead and PsychoAQ use resources from other cores within the gpu, not the encoder part alone.

Same thing I'm also a YouTuber but my recording is lagging so much. My game is getting 99 fps. My recording shows that it is getting 60 fps but video looks like it is getting 10 fps. I can't send that to YouTube. Please solve the problem as fast as possible.
