Whenever I try to record a video, it only records either my usb mic or the desktop, never both, I have a skytech gaming pc so it does not have a built in speaker system so I would really appreciate some help.

Restart OBS and perform a test stream/recording of no less than 30 seconds doing as you normally do, including playing games, full camera or whatever you normally do.
Look in Help menu. Upload the current log file and paste the url to the log in here. Click on the Analize button to start troubleshooting common issues.

I'm not all that smart to do that, Is there any way to have the obs pick up my microphone sound and ubs speaker sound without either cancelling each other out?

You can record a video, upload it to youtube hidden and paste the link here, and by the way that the configuration you have is seen in the video.

How to post a log file, as requested above, is the one pinned post in this forum (and I have link to the article in my .sig)

and in case it helps here are OBS Audio related articles I used when I started
I'm not entirely sure how to fix it, it worked perfectly fine on my old laptop but that had its own speakers built in
