Please post a log with your issue! Here's how...

OBS Studio creates a log file each time you run it which contains very useful diagnostic information. Without a log file, it's much harder for any support volunteers to figure out problems and your post may be ignored. To upload a log file, go to the Help menu > Log Files > Upload Last Log...

Find the log-file (by time and date) from the OBS session where issue was present.

16:31:50.746: Pausing recording due to hotkey
I think you have hotkey assigned to pause recording, and hitting it accidentally. Do you need this hotkey at all? If "Yes" then try to make it less common (use Alt, Ctrl, Shift modifiers and its combinations).

main menu File > Settings > Hotkeys
