OBS wont let me have 2 separate audio tracks, every time I've tried it will only let me have 1 audio track of both my game audio and mic audio, or it will only record 1 or the other. Does anybody know how to fix this problem?

The issue you the video player you are using, as the vast majority do, only plays track 1 audio Have a look in a video editor that will show the multiple audio tracks Which is the reason for the multiple audio tracks, to be mixed in the editor
How you should set up the audio in OBS is to have all audio sources in track 1 and then individual across the other tracks

You can try to use an little audiomixer to manage different sound sources.
i'll use a soundmixer Skytec STM 3020B - audio cable 2RCA to 6,35mm - iRig2 - cable 3,5mm to USB
This works perfect for streaming from out the church and other streams with all of kind of sources.
