I use a 2 PC Setup both with OBS Studio 20.0.1 (had this is issue with previous versions) but the issue is with the gaming PC Preview, i use Projector View to put my gameplay on the capture card because i have a 144hz monitor. Now some games are worse than others with the Preview Lag some games work completely fine, no matter what capture method i use the game will have the OBS FPS going all over the place even though my ingame fps is fine and im not encoding on the gaming pc so im not using too many resources however when ever i tab out of obs it runs at a solid FPS
