That's not a crash, that's a freeze. That's usually caused by OBS waiting on a device that isn't ready yet.
Does this happen when adding scenes other than a Display Capture? Is this a laptop with a dual GPU setup? I'm not sure how that will affect things.
The only other item of note in your log is this:

which usually means you don't have read/write permissions to those files, but they are in your user folder, which you
should have access to. Does your Windows username contain any special characters (like accented letters)? If so, try changing your Windows username to not have special characters. I'm not sure if spaces are included, but you may consider changing your Windows username to not have spaces.
The only other things I can think to try are running OBS as an administrator or making sure your Windows installation and drivers are up to date.
