I have this problem already couple of months, OBS keep crashing during my streams, sometimes with the error on the scrennshot (if i stream with nvenc), sometimes without it (if other codec), sometimes its "blue screen of death", sometimes just stutter, then crash, then i have to restart my pc anyway to start obs again, without restart - obs doesnt work anymore, even cant close the process with task manager.

Tried everything already - changed settings, changed codecs, switched to simple mode - nothing helps.

Having to reset your PC indicates a hardware issue. If you already run the most current graphics driver and have an updated and current Windows system and still have the issue, check overheating, revert overclocking, proper power supply, check memory.

Having to reset the PC is no software and no configuration issue. If you checked everything from the software side (i. e. current drivers, current OS), some part of your hardware has become defective.

Ok what have you tired then? Cause many things you can do to test HW. Have you stress tested the system to see if stable enough? As Koala mention if you have to restart then something within the system needs check deeply into.

and yes i made tests and everything is fine with the system, mostly i have NVENC coded error ONLY WHEN I STREAM. So its 100% OBS problem, not pc, not hardware, not anything else, if you have no knowledge just dont give advices :)

Common knowledge is that if some app is able to stall and lock up your computer, the computer is defective. Today's operating systems are so mature and well designed to not get locked up simply by some app. Only defective hardware is able to do that.
If OBS is the only app that provokes the issue for you, it's still a hardware issue. If you deny this and insist to not further investigate in your hardware, you will continue to run on a fool's errand and never solve the issue. OBS is just using the hardware.

From the error you showed in your OP, you have an issue with your graphics card. The graphics card driver crashes, then it isn't able to recover from this and you have to reboot.
