Question / Help OBS Ignoring settings

I have a square monitor selected strictly for doing "Let's Play" videos of older games, which don't look good in widescreen as they have no widescreen setting and simply stretch. I want my video to be widescreen for youtube and I had a screen capture set up with a customized picture and video of myself playing off to the side to make up the extra space for widescreen. It looked really good.

Well, the game lags too badly using screen capture so I had to switch to game capture. But game capture insists that the video aspect ratio has to be its own aspect ratio and keeps chopping up my game's borders. Why does game capture ignore my monitor's aspect ratio settings and insist on using the video's aspect ratio settings? Help! How do I fix this!?

I have already tried that. It has absolutely no effect, it only fits the video to the full size of the capture area, blocking out everything else. It does not change the aspect ratio at all.

Let me reiterate: My screen is 1280X1024, the same as older TVs that gamecube and SNES etc games were intended for. But the video has to be 1280X720. I've been shrinking down the screen capture of the game and filling out the extra space (because the video space is then too wide) with a cute drawing and a small camera capture of myself playing the game. But when I switch to game capture, it refuses to match aspect ratio to my monitor despite capturing the full screen game. It insists the game capture aspect ratio must match the video capture aspect ratio. It won't let me change it.
