Question / Help OBS Encoding Issues After I Have Been Streaming For Around 4-6 Hours

I have been streaming for awhile, but i recently (last few months) started having an issue were after about 4-6 hours of streaming i will start getting a error on OBS say "high encoding whatever try turning your setting down" (don't remember the exact words).
So i have tried the following, turning down my bit-rate, turning down my resolution, turning down my FPS, turning UP my encoding preset from very fast to super fast or ultra-fast, i have switched from x264 based encoding too Nvidia NVENC based encoding, i have reset my stream key, changed my encoding location, dropped my resolution, reinstalled my obs used 32 bit and 64 bit. I am like out of option.
As soon as i stop stream and then restart it (not close obs just stop and start stream) then everything is back to normal for another 4-6 hours.
Honestly have run out of ideas of how to fix it. I did a 24 Hour Stream a few days ago and had to restart stream every 4 hours, it doesn't matter what game im playing or what time it is. My cpu will be running at 40% then at 4-6 hours my CPU is running at 100% till i restart stream.
