OBS Encoder Overload

I recently updated OBS and ever since I did I've constantly been getting encoder overloads while recording making the videos unwatchable. I'm using a laptop with an i7 intel core, GTX 1060 gpu and 8gb ram and i know that this laptop can record games and stuff fine with obs including webcam because I have been recording using OBS for over a year and it's never had encoder overload problems recording at 1080p 60fps. I tried everything I could and nothing seems to be working. It only became like this after it's recent update. Please help because I have no other ways to record videos without OBS and I'm recording videos almost everyday for Youtube.

Set Settings->Advanced->Video->Color Format back to NV12.
This actually helped thank you. But it was doing this before I changed it to RGB as well just not as much. If I run into the same type of issue again what should I do?

1. To ensure that OBS Studio has the hardware resources it needs for realtime streaming and recording, we recommend disabling the "Game DVR Background Recording" feature via these instructions.
2. Use the newest version of OBS from https://obsproject.com/download
3. Run OBS as Admin. Right click on the shortcut, properties, advanced, check box, ok, apply, ok.
4. Use the NVENC encoder instead of x264 for recording.
5. Record to MKV or FLV. If you record to MP4 or MOV and the recording is interrupted, the file will be corrupted and unrecoverable.

If you require MP4 files for some other purpose like editing, remux them afterwards by selecting File > Remux Recordings in the main OBS Studio window or enable Auto Remux in the Advanced Settings.
6. Display and Game Capture Sources interfere with each other. Never put them in the same scene (Scene 1).

Post new log after making those changes if still having issues.

Use the default values of OBS by creating a new profile (Menu Profile->new) and don't use the previous profile again (remove it).
Don't change anything from the default, except values you need to change. If you don't know the impact of some value, don't change it. Everything you change has an impact. If you don't see an impact after a change, always revert the change, because apparently you did change the wrong thing, and the impact may hit you later (just as in your above issue).
If you experiment with values, revert them after the experiment or just reinitialize everything to default by creating a new profile.
