Can you enable CFR and let us know if that helps?

(Settings > Advanced > under Video check 'Use CFR')

It would also help if you included an OBS log:

I added the logs below, unless you're reffering to .dmp files?
If it's the general OBS log then here is the latest one:

CFR doesn't change much, I tried it before and didn't do anything :(

This crash isn't directly related to OBS. If enabling CFR does not fix the issue with x264 then we believe (from one previous case) that it may be an issue with the RAM in your system. You could run memtest (http://www.memtest.org) to see if there are any issues. The previous individual found a bad stick and had replaced it, fixing the problem.

If you do find errors, it may be possible to fix them by slightly increasing the voltage on your DRAM. (if you have 1.5v modules you can increase to 1.56 but not higher). Otherwise you may need to replace it.

I have, done a scan on my ram modules recently and they are fine. Are there any other settings that could cause this? I have changed my bitrate recently before the breaks so I'm wondering if that could have caused it.

Are you saying that you didn't have these crashes before changing your bitrate? Was it with any particular version of OBS that it was stable?

This is a crash related to the x264 module which they do not have direct development/control over but different versions of OBS have used different versions of x264.
