After numerous crash-free streams, I have confidence that I've solved my problem.
I designed an alert that displays emotes on it and I'm embarrassed to admit that most of the emotes were the artist's original delivered product; some as large as 4096x4096 pixels. This alert would *always* cause OBS to hang, even if I simulated the event while offline, and would also often coincide with a crash. So I optimized / downsized those emotes (and just about every other image used by OBS) and the crashes have stopped. I think I was asking too much of OBS too suddenly.
