Finally got around to posting this. This issue has been plaguing me for a while. Basically, OBS will randomly crash SOME of the time (not always) either when I start or when I finish recording. It will never crash during the recording. If it crashes at the end of the recording, the video file is still usable. This has only started happening when I started using custom settings (Custom Output (FFmpeg)). I need the custom output because the default audio codec was giving me issues in my video editor.
I use the h264_nvenc (libx264) video encoder and the ac3 audio encoder. I tried a variety of different settings and a lot of them don't work at all but this is a combination which I found gives me good results. The only problem is the crashes. Sometimes, instead of crashing, it will give me an error that "An unspecified error occurred while recording." The problem with this is that I like to start recording via hotkey and this means that sometimes I have to re-record stuff or alt-tab to check to make sure that recording started fine. It occurs completely randomly, there's no pattern. Sometimes I'll go 20-30 recordings without issues, sometimes it'll crash twice in a row. Just to reiterate, this is an issue with local recording, not with streaming.
Here's a couple of crash logs:
