Question / Help OBS Crashes with any encoder but x264

I've been working with OBS for a few days. Haven't been able to get good enough quality from a recording of Rainbow Six Siege with a i5 7400 CPU and a RX580 graphics card, so I've been trying to record with the graphics card.

The problem is that if I record with anything but the x264 encoder OBS crashes a second after hitting record and gives me a crash log with

It just would be nice to use the graphics card unless I'm doing something woefully wrong recording with x264 considering its saying I'm only using about 5% of the CPU even during gameplay and whenever too much goes on it still stutters on screen. I've tried bumping bit rates up to 10k and it still happens which is weird considering I see a lot of people saying 3k normally is enough for games. I just assume that a lot of stuff is going on, on the screen making me overload the encoder.
