Hello Obsproject

Ive got a Problem with my obs, every time i start a game, then after a few seconds OBS Crashes

Its when i start to Record or Stream ..

There's nothing in that log about a crash, but you are overloading your GPU:

Okay but i have a Ge Force 1080 ti and im streaming and recording at x264 not NVENC

Has nothing to do with encoding, this is rendering lag that occurs before encoding. NVENC wouldn't increase load on your GPU anyway.

okay and how can i fix this, because i have recorded unttil 14.02.2019 after this date everytime OBS Crashes
Is there a way to fix this ?

I don't know, you included a regular log, not a crash log. In general I would advise to backup your scenes and profiles and then uninstall the app and user settings (that will delete your scenes and profiles) and reinstall.
