OBS causing weird lag

So when recording with OBS I get decently high frames that shouldn't be an issue. I'm talking 200 FPS. However, when recording, the frames I actually see are very low. So FPS counter says 165, but it feels much lower and it looks weird during gameplay. Why is this? Can I fix this?
I have a 144hz screen if that's applicable.

What is your disk I/O capacity, and are you monitoring your Disk I/O to see if you have a bottleneck? or maybe some security software that is interfering or slowing things down?
For example, it was not uncommon to tell a/v software to NOT scan virtual disk files
Does your security software (settings) need to be told to ignore recoding file/folder?
