OBS 26.1 suddenly having encoding overloads

I hate making forum accounts to just ask for help but here I am haha, I've used OBS for almost a full year now, and it's been wonderful, just a few days ago though I noticed my recordings were really choppy, I tried to figure out what the issue was, I've done everything from changing the settings, running administration, uninstall/reinstall, I've tested the hard drives, graphics card, CPUs to see if any of them are causing the issue, and I'm just at a loss. I hope someone here can help me figure this out

Change the preset to Max Performance (with 10-30 series nvidia cards there is no diffence in quality between Max Quality and Max Performance but Max Quality causes more encoding lag)
Set look ahead off
and set Max B frames to 0
