Not Sharp/Blurry Output Quality on Recordings

I've messed with all the settings i can find, bit-rate, CBR vs CQP, encoders (HEVC seems to have issues on my 2070 Super), recording format. I can't figure out for the life of me why my recorded video quality is not sharp whatsoever. Log files attached below.

Not looking to stream at the moment, just looking for a fix on my video/recording output.

Using Elgato 4k X / Nintendo Switch

GPU: Nvidia 2070 Super
CPU:Intel(R) Core(TM) i7-9700K CPU @ 3.60GHz
RAM: 64gb

If available, try enabling buffering and hardware decode in the camera settings. If there's a noticeable difference in the preview and the recording, all I can really advise is lowering the CQP number.

I've only played a Switch once and it was awhile ago, but that looks like Switch graphics to me. From a Google search, it seems most Switch games and especially Nintendo Switch games, don't use Anti-Aliasing, and it's noticeable. I would recommend getting a mClassic (Google it) or similar device. The picture below is the edge of a track from Gran Turismo 7 on PS4.

I can't help but think it's something with my hardware. i also tried on my xbox series x. 4k and 1080 and the quality is still just blurry, soft and pixelated. I'm genuinely at a loss.
