No stable audio sync offset with OBS version 27.1.3

There is no stable audio sync offset (latency) after the upgrade to OBS version 27.1.3
Till the upgrade the audio sync offset had the value around 1200 ms, after the upgrade the values are between 900 ms and 4000 ms.
The values changes during streaming.

Our solution was to downgrade to OBS 26.1.1

I'm using 27.2.3 and getting no consistency week to week with the audio offset. I would love to find a method of establishing the right amount of offset before going live, as it looks amateur hour fine tuning it at the start of my streaming. Any suggestions most welcome !
