New User, need Simple setup help plz

I need help mostly in setting up OBS for work using MS Teams recording the meetings at work.

I've used it once and it recorded fine, but didn't get any audio, which was the most important, probably
had left it on Desktop Audio as Default, and was using my computers Bluetooth, but didnt know then to
change it to anything in the Audio Devices, unless Desktop with default would have captured it, but didn't?

Before I forget, is there a place to test this before the next meeting, so I'll know the Audio
Recording is captured?

I'm new to some terminology, like when answering questions at the very beginning.
It asked if I'd be using it for Streaming or just Recording. Sadly I don't know the difference.
Is Streaming like Gaming or lots of animation, my meetings will be dull, just recording the
video from the other end of Teams like Excel, which the last time I used it, the video was great,
so do I keep it on "Just Recording", and Not Streaming?

Next, for Audio, under the Global Audio Devices, I had left it as Default on my first meeting but it didn't capture any.
But now went out and bought a Headset with mic, and I've selected under Desktop Audio the "Speakers / Headphones" option
that probably got populated by me plugging them in to test.
Would this be the way to guarantee OBS to record my microphone and the other side audio also in Teams?

I can go into more detail if needed, but I think getting the Audio to record is my main concern, just want to test it
before meeting next week also.

Any ideas?

About terminology: Recording is the process to write a video file to your local disk with the stuff you're capturing. Streaming is the process of sending the stuff you're capturing live to some streaming service like Twitch, where people can watch live what you're performing at the moment. Streaming is the main usage of OBS, many of its advanced features are designed for streamers and appear useless for recording. Recording is a welcomed byproduct, because it's so versatile for capturing all kind of different input you want to conserve in a video.

Thanks Koala for the help, that terminology helped, basic I know but I really don't do either until I was asked to help up at work.
The manual did help. I remember reading it when I first got this from a recommendation at a Tech store, but everything was new so I went back to the software and didn't go back to the manual. Thanks, all seems to behave like expected.
