Lag is minimal in most of your logs, 0.1%. Disable Game DVR in Windows & Uncheck Psycho Visual Tuning in the encoder settings before you do the test tomorrow morning.
How do i disable game DVR? also the last log on far cry 5 was only 0.1 percent because the total frames was higher, its not consistent if i were to do it again it would be different as proven by the MHRise Logs

Run a test session and post a log
Guide on how to post a log detailed by Dodgepong in the link on my signature.
There's also a log analyzer in my sig you can run your log through first.

Fix any of the suggested issues it lists, if you're still having issue, return and post another log
(after you've fixed the suggestions provided by the log)
Should increase in ram or hard disk will be beneficial?

Look at the stats when you're encoding, if you lag 15 - 20 frames when you press Start Recording the percentage will be high & drop over time. The longer the recording the more it will drop. Except for (1) recording none of the other recordings are missing more than (60) frames.

Not sure what you're asking,
in reference to running OBS ? I mean upgrading your RAM and HD will be beneficial for numerous reasons but you won't cure mainstream problems by doing so and most issues are either user profile settings in OBS or Ingame.
Without knowing your specs the question is hard to answer and pretty generic :)
