You might have a mismatch in color range. There's a setting for that on each source, and another setting for OBS's final output.
  • Full color isn't completely black or white until it gets all the way to 0 or 255 (for 8-bit color; 1023 for 10-bit)
  • Partial or Broadcast color has a deadband of about 5% or so on either end, so anything from 0 to about 12-ish (for 8-bit) is all completely black, and a similar-sized range at the top is all completely white. The middle is scaled accordingly.
I suspect that the Broadcast range came about because the old analog signals really needed to be *completely* black or white when desired, and analog just doesn't have the concept of "equal". So just like overscan, it's designed for the useful range to be slightly smaller than the transmittable range, just so the transmission can guarantee that the full capability of the receiver is in fact used. That has carried over into digital, as the transmission gets digitized as it is, without realizing that the old mindset is no longer necessary.

So we have two color standards: one carried over from the old days, and one that recognizes today's capabilities. They're similar enough that the casual user might not notice at first, but:
  • Sending Partial or Broadcast to something that expects Full, will make it washed out.
  • Sending Full to something that expects Partial or Broadcast, will make it overly saturated.
