Question / Help Need help on a good profile.

Hello guys, I can't figure out how to make a good encoding profile for Minecraft, which contains high-motion screens. My profiles always fail because the video is choppy afterwards :/
PC specs :
i7-4790K cpu
GTX-960 gpu
32GB 1600mhz ram
A 1tb HDD

Hopefully the profile can be in :
1080p 60fps
mp4 format
Prefer Nvenc more than x264 (but it is fine.)
(Size doesn't really matter)

Simple settings
Recording Quality Indistinguishable
Encoder NVENC
Format FLV (You can remux it with OBS to mp4)

Yes, recording.
I tried to use nvenc with 50000 bitrate, with 50000 buffer size, however, the video is still choppy in some high motion scenes :/.

What do you mean by choppy? Is the recording stuttery or laggy? Or is the quality bad?

Stuttery, my game is 60fps and there is no lag in game, quality is fine.

Check if both Windows and OBS have same bitrate for audio: 44.1 Khz or 48Khz.

Make sure frame rate is capped or synced to refresh rate.
