Need advice for an idea I have

I have a YouTube channel where I do music reactions by request. I have over 3,600 requests in my queue, and my channel is growing fast. (It's really a bit overwhelming. I'm 77 years old.) I had an idea to interview some of my longtime subscribers, and I'm wondering how I could do this. It seems I have two options. I could record an interview over Skype or Google Meet and upload the video just like I do the music videos. Or, I could live stream the interview.

If I choose the second option, I'm venturing into (for me) uncharted waters. My vision is that I would have two screens in OBS with me in one screen and the interviewee in the other. But, I would also want to have chat so my viewers could ask questions as well. From my brief research, it appears that socialstream ninja might be a good option, but the tutorials I've watched assume a lot of knowledge that I don't have.

If I decide to go the live stream route, what is the best option to do what I want to do? I've already figured out how to live stream on YouTube, but that doesn't allow me to have a second screen with an interviewee in it. So, I apparently need software to do that. OBS Ninja can do the multiple screens but doesn't have the chat capability (I think).

Any advice from experienced users would be appreciated.

I don't have a fancy setup. I use a Mac PowerBook M1 chip, 16 GB of ram, a nice mike that my daughter bought me, and the Facetime camera to do my videos. I edit them using iMovie and then upload through YouTube Studio. I don't monetize my channel, so I can't afford to spend a ton of money on fancy gadgets or expensive software.
