Whenever I try to record a video game (Minecraft/Roblox), the video turns out like a slideshow. Why? And how can I fix this?
My videos keep turning out like slideshows

Your iGPU/system is overloaded, load reduction is in order. See the link below for suggestions.
Disable Game DVR, this should save some resources.

You changed audio sources while recording, a clean log without the audio change(s) mid-flight would be better.
