So I just made the plunge and purchased an Avermedia C985 and I'm hoping you guys can tell me what kind of stream might I expect from my console gaming using OBS?

Any idea what settings I should use? What quality might my stream be?

Your stream should be fine. You have a fantastic computer and it seems more than enough bandwidth. I would recommend using the estimator to get a good sense of what your settings should be. You should at least be able to have a nice 720p stream.

One important note however -- for the optimal console capture stream, do the following: in OBS' video settings, set your *base* resolution to 1280x720. 1080p isn't recommended because some console games run at 60fps, and the C985 can't do 60fps at 1080, only at 720. And even if you don't run your stream at 60fps, it's still recommended.
