My audio properties in settings & when I try to change the window mode isn't appearing.

Hi, I've been OBS Studios for about 2-3 days now and I'm trying to setup audio splitting for my stream but when I try to change the mode of the window when I create a new audio source, I only get given two options and the option I need isn't appearing, anyway to fix this? Also in settings, audio doesn't show up in the advanced section. Feeling like i'm missing a lot of audio settings that I need to set up.

In Settings->Audio, you define global audio sources.
In the Sources widget you can add scene-local audio sources.
In Edit->Advanced Audio properties, in the matrix on the right, you define the assignment between audio sources and audio tracks.
Set Settings->Output->Output mode to Advanced to get the options to record to different audio tracks (in simple mode, only track 1 is ever used)

Then,
in Settings->Output->Recording->Audio track you define which audio tracks are written to a recording. Multiple tracks possible.
in Settings->Output->Streaming->Audio track you define which audio track goes out to the stream. If you stream to Twitch, you can additionally define a different audio track that goes out to the VOD. This way you can have one track for your live stream and a different track on the VOD of that stream.
