Multiple (3) iOS devices input via USB capture cards, display OBS broadcast onto TV via HDMI out from PC

Hi there, I am new to OBS, and really I am just trying to figure out if I should do a deep dive into this or if maybe it is just not suited for my purpose.
I have built a golf ball hitting range in my garage. I have 2 iOS devices set up to record video of each swing (amazing apps available to do this "Swing Profile") and I have a 3rd iOS device connected to a launch monitor which displays the ball path based on metrics and shot metrics. Fairly basic graphics for the launch monitor, but the 2 video devices are recording at 240 fps... they do not play back at 240fps, the playback is in slow motion, so I doubt it would even be 60 fps.
My intent is to use 3 lightening to HDMI adapters, with 3 HDMI to USB adapters plugged into my PC, then output the OBS broadcast out onto my screen using the HDMI output.
I saw a YouTube video showing how to mirror an iPhone screen, so I know at least mirroring one screen is possible, but is it possible to do 3 and is HDMI output possible?

So The answer is yes....
Re: multiple iOS screen mirror steams, at least using NDI HX Capture and NDI tools. It's not ideal as there is varying degrees of lag due to the wireless nature of the connection. I think I will get the video dongles and the capture cards. It's going to be a mess of wires, but the lag will be managed.
Re: HDMI output, just right click and preview, choose the monitor you want to output to.

All in all its pretty cool software, nice to see an open-source option and a community supporting it.
