Multichannel Audio Stream

I’ve got a fairly unique use case and want to see if it’s possible using OBS;
A friend and I want to do a virtual music nights between our multichannel (7.1) media rooms. He’s in Kansas City and I’m in Rochester, NY. I’d like to use a Focusrite 18i20 at each end to transmit/receive the line level 7.1 audio between us.
Can OBS accommodate this set-up?

Probably. But the bigger problem is going to be latency. Would you rather have unusable stuttering, or would you rather increase the buffer to about 10 seconds worth of delay?

On a single private network in the same building, you can get the latency down with decent quality to make this work, but the open internet drops enough packets to require that tradeoff. The resent packets need to arrive in time to slide into the buffer before they're needed. The more of them get dropped, often multiple times, the longer buffer you need to make it work.
