Multi-Channel Audio Recording Not Working.

I followed a youtube set up, and It was working like 3 months ago, but it stopped out of the blue.
It picks up the desktop audio in channel 2, but no other channel. If I switch my Mic to channel 2 it pics that up but nothing else.

I have tried messing with a lot of settings and I have tried a bunch of fixes shown online. I even did a fresh install after removing all the settings and everything and nothing I have done is making the multi-channel recording work for me now.
Before it is asked I am checking that it doesn't work via my media editor and even adding a new audio track in DaVinci resolve does not resolve the issue.

I am pulling my hair out on this
Thank you for your time and effort.

Can you extract the audio tracks manually, via FFmpeg for example?

What do you expect? According to your setup, this is what you configured.
You configured OBS to write track 2, 3, 4 to the video file.
You configured desktop audio to go to track 2, and nothing else to track 2.
You configured mic to go to track 3, and nothing else to track 3.
You configured nothing to go to track 4, so this track is silent.

So if you inspect your recorded video file, you will find desktop on the first track and mic on the second track. The 3rd audio track in your video file is silent.

I am saying that is not working. When I bring it into the video editor It has only 1 track that is coming from channel 2.
It does not pick up my Mic in channel 3. When I put Spotify on channel 4 it does not pick that up.
The only channel that OBS is sending to the video is channel 2 no other channel.

Things seem fine here, the issue is probably with your import settings in your editor and not the video itself. You can open up this video in VLC, click the audio menu at the top, and swap between audio tracks to confirm they are all there.
