Is there a way to have more than two desktop devices. If not why is there not an option for it?

Just Add devices as Audio Output Capture and Audio Input Capture source.
The default setting is for Simple Output mode, mostly. But if you want full control over the sources (including naming and availability per scene - then add audio as Sources to the scene).
