Minecraft being discolered in some images as well as general stuttering

I play with minecraft in 720p fullscreen to save FPS and have since then started using a game capture to record instead of windows capture, and it works fine, with the exception of 2 things:

1. Stuttering, this happens more often the higher my settings are. In 720p 60 FPS it seem to happen every few seconds where it just freezes and then continues recording, but with 720p 30 FPS it only starts doing it when I get into a particle intensive environment (such as a trade in PVP) it just freezes or lags a bit before continuing on normally

2. Weird discoloration of certain things.

Most of minecraft looks exactly the same in the recording as the way I see it while playing, but some things are changed, notably made darker. The following I have noticed changes in:

note how in that imgur it has a sort of dark frame, but when I am actually playing the game that is not present and the area around the nametag is completely see-through, despite this the recording for some reason makes it darker around name tags

Water, it looks a lot more dim, not perfectly black but much more dim and unsaturated then what I see on my screen

Glass, pretty much the same thing as water

(probably some other things I havnt noticed yet)

Note: minecraft has 10.5GB of ram allocated and I am using lunar client (optifine client with FPS boost and other features, allowed on hypixel)

note: there are multiple instances of stuff like this happening, but the log I linked is the one with the screenshot included and was 720p30 with mostly smooth recording but occasional stuttering during the more particle intensive trades

btw if ur curious I can record in 1080p not fullscreen with a display capture and the discoloration is solved, but the stuttering still happens and I get less FPS in game
 
Update 3: it still happens if it is set to 1080p and downscaled to 720p (even if it isnt set to 720p)
