My current issue is that my microphone is capturing sounds on scenes that don't have any mic settings. How can I fix this??

In case you want some scenes pick up your mic and some scenes not, go to settings->audio and disable your mic. Then go to every scene you want to pick up your mic. In each, add an audio input source and configure your mic device in this source. In case you have more than one scene you want to pick up your mic, add the additional sources with the "add existing" option.
