Lossless Video vs Lossy Video

Can OBS Studio capture video in a lossless format? I ask this because text in the size range of 12 points is illegible in all of the lossy formats I have tried.

In Output settings, change "Output mode" to "Simple" then "Recording Quality" to "Indistinguishable" or "Lossless".

Also, downscaling as little as possible or not at all will preserve as much image accuracy as possible.

Thank you for your help. The image quality is much better now.

However, the grid on the graph I’m recording has been simplified.

Can you post a log file of a recording session?

There's no recording session in that log so I can only offer suggestions based on limitd information.

Try each of the following, one at a time:

1) In OBS Settings --> Advanced, Change Colour Range to Partial;

2) In OBS Settings -->Video, capture at 30FPS;

3) In OBS Settings -->Advanced, change Colour Format to i444 or RGB.

If I take your screenshot png with the visible grid lines and record this with my OBS Studio (inserted with media source), I see the grid lines perfectly fine with playback. So it might be your issue is not with recording but with playback - with your media player. I used no special settings - it's all the default settings with color format NV12, color space 709, color range partial and quality "indistinguishable".
No attempt to record anything near lossless.

Try a different media player, and play the video real fullscreen. If the media player downscales for a smaller display area, it might be the thin grey lines are eliminated with that downscaling.
I use Media Player Classic, and this player is able to downscale even these thin lines fine:
