Settings -> General -> scroll down
There are options to remember projectors...
Note however, that if OBS is ever closed without the projector, it'll remember *that* for next time. So make sure you never close the projector separately!

That said, OBS isn't really made for digital signage. There's probably something else that's made specifically for what you're actually doing.
