Try not recording to mp4 files. Record to mkv and then convert the file to mp4 once done. OBS has a built in feature to do this. Recording to mp4 is not recommended.

You have a Xenon core. Wow those are not really designed for gaming; they are more of an Enterprise thing. I am pretty sure there is a way to assign more resources to a given task i.e. from default of say 4 cores to your game increased to like 8 maybe 10. At a minimum you can give the game high priority in the task manager. Worth a shot.

Oh boy, lots of a settings mess going on here. Whoever's advise you previously followed for OBS settings I'm about to discuss - I'd recommend ignoring them from now on.

And as noted above, I'll so far as to say I won't comment further if you insist on ignoring big read warning about not recording to MP4.

recording at 120 fps with a 75HZ monitor? And for minecraft? what purpose are you trying to get with > 30fps?
Why did you change YUV mode? for now, put it back to default, and I suspect that will fix your issue
