Can you elaborate on removing the VLC plugin? (I do have the latest version of VLC). I'm simply streaming mp4s from a designated folder by the way.

Delete C:\Program Files (x86)\obs-studio\obs-plugins\64bit\vlc-video.dll

OK, I removed that dll so hopefully that will alleviate the crashes (the other two crash reports had the same info by the way). Thanks for the help!
