In that case stop recording and continue later. Use an editing app to joint both recordings and your done.

No. The recording file is being written during the recording at all, not just after pressing the stop button.

If you intended to record earlier and rethink later, just stop the recording as usual (the file is already there in any case), then use the obs file menu to open the recordings folder. Have a look for the last/newest recording file (time mark in the filename per default) and just delete this newest file (under windows with shift-del to bypass the trashfolder). But rethink twice.
