Is my console setup correct connected for recording through OBS? (RGB scart, Framemeister etc.)

Hi!

I have a lot of older consoles that I use to play on my CRT (Bang&Olufsen MX7000) which gives fantastic video and sound, a great experience so no complaining here.
Now I want to record my gameplays and want to do it through OBS. Let's take the original Xbox for example which I use a scart cable that goes from the console into
the CRT. That's because I want to play on my CRT in realtime so there won't be any lag. I then have a second scart that goes from my TV that goes into a scart to HDMI converter (using this one https://www.ebay.com/itm/174420881889). The HDMI cables goes into my Framemeister which then have a HDMI that goes into my Elgato HD60 S which then goes into my capture where I have the OBS. The thing is that I got a pretty good recordings of my gameplay but I think the colors seems to be different in the OBS and the image is a little blurry.
Therefore, I'm asking if this kind of setup is the right one when it comes to record older consoles when still playing on a CRT or is there better alternatives when it comes to scalers or capture cards etc.
Hope any of you have the time to read through my setup situation.
