I'm wanting to try a few things with some of my old videos, I can do it in premiere if need be, it will just take a lot longer, is it possible to do something advanced like this with a remux?

You'd need to specify what kind of things. Generally though, no.
A remux is just copying the video and audio streams from one container format into another container format. No changes to the video/audio streams are made (other than MAYBE reassigning track numbers to change the ordering, with some remuxing tools).
