So, I seem to always have issues with my recordings. Ever since I downloaded OBS I've dealt with issue after issue. Pixelation, slow performance, etc. Nothing I have looked up (forum, youtube videos, official NVIDIA/OBS site recommendations, etc.) has helped me. I have been trying to figure this out for about a month or two, but I'm frustrated and running out of hope here. Now my pixelation is not as bad as it was before, however, now I am having performance issues with my OBS recordings and playback.
I have been using Win10 Game capture in the meantime, but I am a content creator and would really like to use OBS. OBS gives me a range of options, but the quality has been terrible thus far. I have created a video to showcase one example of some performance issues I have been having. I have done multiple tests with varied results, but in my crunch for time, I decided to go with this version (which can be found here: https://youtu.be/0gdv_aTTIqQ ). Now I do want to say, in this video OBS slowly degrades in quality/performance so please watch until the end.
Now, my gaming PC is very new (almost a month old now), so I do not suspect any hardware problems at this time as everything works well. I personally feel I am just not knowledgable enough in this program to know what or how these settings affect the quality of my video recordings and playbacks. My goal is to achieve the same level of quality as Win10 Game Capture (if possible). Here is some information about my PC and OBS that I feel may be needed to address this problem:

GPU: Nvidia GTX 1660 (6 GB)
CPU: AMD Ryzen 5 3600 (3.6 GHz 6-Core)
RAM: 16 GB
HDD: 5 TB
SSD: 500 GB
