How to stop OBS from opening last project on startup

Hi, I am new to OBS and I have two questions.

1. As I am new to OBS I want to learn the software. I don't want to stream or record just yet. Just navigate through OBS and learn the ins and outs with out having to enter a stream key.
2. Is there a way to stop OBS from opening the last project every time I launch it?

By project you probably mean the Profile (containing all kinds of settings) and/or the Scene Collection (containing, as you might have guessed, all your scenes and references to their sources). For people streaming and/or recording I cannot imagine a use case in which it is preferable to start completely from scratch every time you enter the program. Just more clicks to do opening Profile and Scene Collection before you can start streaming... (Besides the fact that the program cannot have no Profile and Scene Collection, so default empty ones will be created then.)

Why would you want to learn OBS Studio without settings and scenes? You don't have to enter a stream key until you actually start streaming.
