I pressed the stop recording button, and then accidentally pressed the stopping recording button. When I checked the recording, it was cut off. How can I recover the remaining 10 ish minutes of the recording?

This means due to overload the encoder was not able to encode most frames. What you see as video is probably a choppy slideshow, if any. Usually, the encoder chokes in this situation and stops encoding altogether, so the last 10 minutes are not lost because you pressed the stop button, it was already lost due to the overload at the moment you pressed stop.
According to the profile info at the end of your log the encoder needs 18.8 ms and more to encode most of the frames, while for 60 fps there are just 16.6 ms available for encoding. You need to lower encoder load. Reduce fps to 30 or switch to a faster encoder target use, for example switch from TU4 to TU7. For recording, this will increase file size slightly but not decrease quality.

There is nothing to recover. It wasn't recorded in the first place.
About changing to TU7 - unfortunately, that's available in advanced output mode.
Set Settings > Output > Output mode to advanced
