How to record videos -RANK beginner

I can't figure out how to simply record videos from the Internet like YouTube. Is it possible to find a simple step by step guide? I am not savvy to all the nomenclatures I see.In other word is there an "BS for Dummies"??

Thank you and I will work on it. Meanwhile - the OBS takes up my whole computer screen and I cant find a way to turn it off or go back to something else. The only thing I can do is do is the "three fingered salute" and end the task. No "close" button?? No way to minimize it ?
 
On the top right:

Minimize, Maximize, Close.
Like any other windows app.
 
If OBS was set to run "Fullscreen Interface" (F11 hotkey) then standard buttons for window control should disappear. To exit the "Fullscreen Interface" mode in OBS user can hit F11 key or may click the option in the main menu View > Fullscreen Interface
 
Thanks BUT - F11 works on this help screen but NOT on the OBS site. Still cannot reduce the full screen!
 
Lose everything if Minimize. here is what Maximize looks like: MAYBE I should uninstall and try again with recommended setting from you folks? All I want is to record Youtube or other authorized videos for later viewing
