High latency with IP camera

I just wanted to toss this out there and see anyone had a suggestion.
Sorry I don't have a log to share at this time.
I have been using an IP (WiFi or Ethernet) camera to try some things with OBS. So far I have tried to go direct as a media source, and just using the camera software as a screen share, neither has yielded satisfactory results. The latency is better with the ethernet connection but still about 1500 ms to 2000 ms and there is the issue with A/V sync. I managed to get the sync nailed down once, but the next time I tried it was out of sync by a totally different amount.
I am just starting to learn OBS so I know what to do for a future project or two, one for amateur radio and one for photography. Yes I know there is tons of stuff already online, for both topics but I am targeting one on one approaches.

Any ideas anyone might have will be greatly appreciated.

The latency on WiFi is going to change over time due to a variety of factors so it could change during use or between session by a bit or a lot
A wired connection should be regularly stable over time Getting the video as direct as possible into OBS will help
What camera are you using

I was using a Amcrest IP2M 841, both of those are doing security jobs now, but I may try another one from another company moving forward. The IP2M is a PT camera, not really needed for what I want to try. I might get a fixed unit from Reolink.
