I am a streamer who would like to play games instead of doing just chatting all the time. I do try to play games, when I play a game recording on OBS (Mostly Minecraft) it appears perfectly fine when I'm playing, but once I look back through the recording/stream it is very glitchy.

I have tried everything that I could find to help me but nothing has worked.

That's all general information, and doesn't say much more than, "I have a problem." We can't solve that.

Do you have details? Recordings? Logs? Seriously, spam us with the minutia, and remove your interpretation from it as much as possible. We need to see what you're seeing, not what you think it's doing.
