You're running into rendering lag, which is a result of OBS not being able to render the scene within the necessary frame timing, and usually a result of OBS being starved for GPU resources.
You have 5 active game capture sources. That's not ideal, but not necessarily the source of your issues.
Most likely you need to limit your in-game framerate or lower your graphics settings so that OBS has more GPU resources available to render the scene. The game always gets priority unfortunately, meaning you have to ensure you're not letting it use full 100% for the game.
